This is the first recipe I can really call my own. I started fooling around with oatmeal cookies years and years ago, because I could never find one that I thought was soft and chewy and spicy enough. These are, plus they're really easy to make.
Preheat the oven to 350 degrees. Mix the flour, baking soda, cinnamon, nutmeg, allspice, and salt together in a large mixing bowl. Stir in the remaining ingredients. Drop in generous teaspoonfuls on ungreased cookie sheets and bake until the edges are brown, about 12 to 14 minutes.
